When it comes to food, Hyderabad is famous for Dum Biryani and of course Haleem. Haleem is generally prepared from wheat, lentils, barley, spices and meat (generally mutton[meat of lamb] and chicken but there are also varieties made of fish and emu). There is also a vegetarian version of haleem which is prepared using certain vegetables instead of meat. Haleem is served along with minced and fried onions, cashews fried in ghee, minced mint leaves, spicy masala liquid and a piece of lemon.
Haleem has been introduced to Hyderabad by Arab traders and the muslim conquerors but the unique taste of the hyderabadi haleem that we have right now is developed during the Nizam's rule. Haleem is generally prepared during the holy month of Ramadan and due to its high calorific value, haleem is considered as the best dish to break Ramadan fast. Haleem is prepared in big wood-fired cauldrons in which all the ingredients including meat is cooked for 7-8 hours with repeated mixing and battering the meat to get its thick jelly like consistency.
